The weather is getting better for us up in the Northern Hemisphere and I have already seen people starting to get their braai's (that's a barbecue) fired up! With that in mind I thought I'd put together a recipe for you to use in the coming months to WOW your guests!
It looks good right? So here's what you'll need....
Purchase a bag of mixed leaves, or spinach,
A Handful of Grapes,
100 grams of Cous Cous,
1 Tin of Salt Free Sweet Corn,
1 Tin of Chickpeas,
1 Handful of Raw Cashew Nuts,
The method is very simple - boil the kettle and add water to the Cous Cous, cover and leave for 5-10 minutes.
Chop up the apple, carrots and baby corn, add to the mixed leaves in a colander. Add your chickpeas, sweet corn and grapes, rinse thoroughly and let it drain. Pour everything into your salad bowl, add your cashew nuts and you should be good to go!
I added a spoonful of hummus and branston pickle along with two dark rye crackers to make it even better!
Feel free to add any other sides to it!
Within about 15 minutes you could have a really awesome meal that can nourish your body in the right ways! And guess what? You'll have no guilt going back for seconds!

I hope that you have had a great week and you are looking forward to letting your hair down and relaxing this weekend.
With that in mind I thought I would share a simple recipe with you. I get asked a lot about the food I eat and people often comment on the healthy nature of my diet and that I never seem to eat bad food.
Well there is method in my madness, I do eat some foods that taste just as awesome as the junk foods of yesteryear and they are very calorific. I just try and make the healthiest choices in terms of chemicals, dairy and gluten. I love Ice-Cream and would love to pig out on it all the time, but I seriously do not trust the ingredients in most processed food these days. Here's a little article for you to read:
Now not all Ice Creams are going to be like that but the majority of them contain things that you cannot pronounce, these days that screams DANGER to me. I have had quite a 180 degree shift in my lifestyle and truth be told it has been the most eye opening experience for me. I hated broccoli, never like cauliflower much unless there was a lot of cheese on it and I could drink pints of milk with no problem. I also suffered from migraines, and a long list of other issues that made me very lethargic. Giving my body the chance to sample fresh foods was something that my mind didn't like for the first week or so, I struggled with the 'come down' from the sugar highs and even months down the line my body was getting rid of toxins like you wouldn't believe.
All in all I believe it took about 6 months for my body to really adapt to my new lifestyle and heal itself on the inside. And I believe it will take many, many more years to combat the side affects of my old smoking too; but I'm okay with that, the main thing I want to do is give my body the most optimal environment to repair.
I think I have rambled long enough now... On to the nice easy Ice Cream alternative.

Handful of your chosen berries
400-500ml of coconut milk
Handful of cashew nuts
BLENDER/ FOOD PROCESSOR
Chop the bananas up and freeze them, when they are ready throw them into a bender with a the berries, coconut milk and cashews. Then blend! Woop Woop! If you have Cacao Powder you can always add some in to add flavour. Depending on the power of your machine you might have to stir the mixture!
So simple and natural and it tastes creamy and great!

Given that my back has been a little tender this I have decided to skip a workout video this week and focus more on some good food! It's a nifty little lunch idea that tastes awesome and fills you right up! All you need is the following:
Rye bread with a toaster
Chilli flakes and a half a lemon if you wish.
Avocado why all the hype?
Possibly one of the most awesome foods in the world. I remember as a kid I found the texture a little strange and I could only really have it with Aromat sprinkled on the top. (Turns out that Aromat is highly addictive due to all the MSG in it). Little did I know it would turn out to be a lifesaving food. I had avocado every day for the first 2 weeks of my weight loss journey.
Since changing my taste buds over the last few years and eating a more plant based diet I find I go through phases of craving different foods, sometimes it is oranges, grapes, melon and most recently avocado. Avocado has had a bad rap and people often talk about the fat content, but it grows from the earth and is a fruit to be consumed and enjoyed in it's most natural state. It is not made in a refined manner with chemicals and additives.
150 grams of avocado has around 240 calories, making it calorie dense, some of the many vitamins and minerals it contains are Vitamin A, Calcium, Vitamin C and Iron. It also makes you feel full as the fibre content is nice and high. Health benefits derived from making an avocado part of your meal plans will be: healthier skin, a stronger healthier heart and reduced inflammation. The list continues but you didn't come here for that you came to see what the concoction is... It is so simple, it's scary.

This is a simple recipe for your weekend, it is also to celebrate 3 events, my 50th blog post, World Vegan Month and finally my birthday on Sunday! WO0HOO!
I have always been a huge fan of Italian food and it is safe to say that the majority of my 140 kilo body back in 2013 was made of Pizza dough. If you follow me on Instagram then you will have seen a couple of pictures of this recipe the other day. So here it is broken down for you to follow. Nice, healthy and more importantly it is a Vegan dish.
1 head broccoli
Handful of spinach
6 ripe tomatoes
1/2 punnet mushrooms
1 onion and three cloves garlic
1 bag of 'FreeFrom' Pasta Gluten and Dairy Free (you'll probably need to use half the bag, depending on how many people you are feeding.)
Fry some garlic and an onion in a saucepan chop the broccoli, asparagus and mushrooms up and add to the mix.
Grab 4 tomatoes throw them in a blender with a handful of spinach, a couple of mushrooms and half a cup of water. BLEND - Warning: it will look brown but that is okay!
Pour the sauce from the blender into the saucepan, add your last two whole tomatoes and simmer on a low heat for about 10-15 minutes while you cook your pasta. (I'm assuming that you know how to cook pasta....) The whole tomatoes will cook and then when you feel the time is right you can SQUASH them to spread the juiciness!
Season the sauce according to your taste, but all in all you'll have something fresh and easy to sink your teeth into.
If you are used to canned or other bolognese sauces and pasta with gluten you may be familiar with a bloated feeling after eating it. Well this recipe won't give you the bloaty belly! Unless you eat it all in one sitting and don't share... Remember, sharing is caring...
